At Byeokje, four decades of experience shape the way we select, prepare, and serve it.

Not every Hanwoo becomes Byeokje Hanwoo

We select exceptional Hanwoo at daily auctions, purchasing each animal whole and making use of every cut.

Only a small fraction of Hanwoo reaches Korea’s highest grade. From this highest tier, we select only the animals that meet the Byeokje standard for exceptional flavor, marbling, and quality.

This Is What We Call
Byeokje Seolhwa Hanwoo

Seolhwa means "snow marble" — the fine, delicate marbling that resembles snow, and melts gently on the palate. Only Hanwoo that meets our standard carries the name.

Hand-Trimmed, the Way It's Been Since 1986

Our master butchers read the grain, texture, and marbling of each piece before shaping it by hand. It's finished with the Diamond Cut, our signature technique — scored by hand to open the meat to charcoal smoke and let seasoning reach deeper into marinated cuts.

On the Grill

Every cut is grilled over natural charcoal, right at your table, by a dedicated grill master — never gas. The charcoal's clean smoke works its way into the meat as it cooks, adding a depth that draws out Hanwoo's own savory aroma rather than covering it. All you have to do is enjoy it fresh off the flame.

The First Bite

Unlike a steak, which rests and cools before it reaches the table, Hanwoo comes straight off the charcoal to your plate — the aroma and juice still alive. Try the first piece plain, or with only a pinch of our hamcho salt, before reaching for anything stronger. It's the clearest way to taste the meat as it is, a depth few other beefs carry.

Every Cut, Its Own Character

Hanwoo is butchered with far more precision than most beef traditions — dozens of cuts, each with its own flavor and ideal doneness. Our grill master times each one accordingly, pairing it with the dip that suits it best: hamcho salt for the leaner cuts, a scallion-based sauce for those that call for something sharper.

With Banchan

No Hanwoo meal comes without banchan — an array of seasonal side dishes served alongside the meat, from kimchi to namul, Korea's lightly seasoned vegetables. Eaten bite by bite between cuts, they add the contrast that makes each piece of Hanwoo taste even better.

Paired to Match

Alongside Hanwoo, we keep a selection of traditional Korean liquors and wines chosen to complement the meat. Each is selected to stand up to Hanwoo's rich marbling — cutting through the richness, or matching its depth, rather than being lost beside it.

Naengmyeon, to Close

A Korean barbecue meal isn't complete without naengmyeon — cold buckwheat noodles that cut through the richness of the grill. Less a side dish than a final course, it closes the meal the way it's meant to end.
